Sometimes inspiration hits me at the most inconvenient times. For example when I just got home, after a 10 hour car ride, extremely tired and glad to finally go to bed. That´s when my brain decides to get busy.
Brain: You know, I´ve been thinking…how about avocado popsicles.
Me: Shut up brain, I´m trying to sleep.
Brain: But…think about it…Avocado lime popsicles…maybe with some coconut…fresh mint…or you know, chocolate…
Me: Damn it brain, now I´m awake. Okay, what do you propose?
After a quick research I realized that I´m by far not the first to come up with this excellent idea. However, I couldn’t let go and kept thinking about different flavors that would be just perfect for the popsicles. The thing is, my love for avocado is getting out of hand. Everybody loves guacamole and avocado on toast is almost a classic now. But I don’t stop there. Noooo, I´m putting avocado in smoothies (yummie), muffins (yummie), chocolate mousse (not so yummie) and apparently now in popscicles too.
The first step is to admit that you have a problem. I hereby officially found the club of the anonymous avocado lovers. We meet Thursdays.
If you think that avocado popsicles sound like an awful idea, I´m going to have to convince you otherwise. Just trust me. The avocado is mainly for the color and consistency. The flavor comes from the lime and fresh mint. You could also use coconut milk instead of yoghurt to make the recipe vegan and a little more exotic. I love the flavor that fresh mint adds but I guess basil works just as well.
Makes about 6 popsicles:
250 g plain yoghurt
1 avocado
2 limes
4 tbsp. maple syrup
Fresh mint
1) Mix yoghurt, the zest of one and juice of two limes and maple syrup. Measure 100 ml and put aside. Add the avocado a couple of mint leaves to the remaining yoghurt and using a blender, mix well.
2) Fill the avocado mixture two thirds into the popsicle molds. Top with the yoghurt mixture, add popsicle sticks and freeze for at least 4 hours.
