Grandma´s apple cake recipe

IMG_8175A couple of weeks ago, I raided my boyfriend’s parent’s garden and picked all the plums and apples I could. The plums were immediately used for Zwetschgendatschi but the apples have been waiting for their turn ever since. That is, until my boyfriend’s parents came to visit me at my new flat and I finally got around making my grandma´s apple cake.

IMG_8211This is the second time my grandma’s recipe made it on the blog and I still have many more. I guess it´s pretty obvious who handed down the passion for baking and cooking to me. My grandma makes the best Christmas cookies there are. Her waffles are amazing too and her cakes…yumm! I´m still no expert when it comes to her cookies but her cake recipe never fails.

IMG_8243If I ever were to open a café, this cake would be served on a daily basis. It´s just so good and perfect for a coffee break. It´s crisp on the outside, soft on the inside, filled with tender apples and crunchy walnuts. Add some whipped cream on top, grab a cup of coffee and your favorite book and you have the perfect afternoon.

For the batter:
250 g sugar
250 g butter (at room temperature)
1 tbsp. vanilla extract
4 eggs
125 g all-purpose flour
125 g corn starch
2 tbsp. baking powder
For the filling:
100 g walnuts
6-8 apples (depending on the size)
1 tbsp. cinnamon

1) Beat the butter while gradually adding sugar and vanilla extract until soft and fluffy. Whisk in the eggs. In a separate bowl, mix flour, corn starch and baking powder and sift into the butter-sugar-mixture. Fill the batter into a buttered spring pan.
2) For the filling, chop the walnuts and place on top of the batter. Peel the apples, cut into quarters, sprinkle with cinnamon and place on top of the batter until the batter is completely covered. Bake in the preheated oven at 175°C for about an hour. If it turns too dark, place some aluminum foil on top for the remaining time in the oven.
3) Once the cake has cooled completely, dust with confectioners’ sugar. Serve with whipped cream.

  1. Der Apfelkuchen sieht traumhaft aus und erinnert mich an meine Oma, die nun leider schon über 10 Jahre nicht mehr lebt. Ich bin bis heute auf der Suche nach einem Marmorkuchen, der an den meiner Oma rankommt. – hast Du vielleicht ein Oma-Rezept für Marmorkuchen?

  2. Hallo! Ich werde den Apfelkuchen morgen mal nachbacken. Dazu eine Frage: Wie groß war deine Springform? Danke und liebe Grüße!

    1. Hallo Anna, für den Kuchen habe ich eine ganz normale 26 cm Springform benutzt. Du kannst auch eine kleinere nehmen, dann wird der Kuchen einfach ein bisschen dicker. Viel Spaß beim Backen! 🙂
